Salad Bites: How to store, mix, dress (and dress up) greens
TO STORE : Swish greens gently in cold water and drain, about three times, to clean. Do this in a salad spinner and then spin-dry. Store chilled in an airtight container lined with paper towels.
TO MIX : Combine assorted greens for more dimension, such as peppery greens (arugula, watercress, mustard) and mild greens (Bibb, romaine, Boston), then add a few herbs.
TO DRESS : For vinaigrette, shake up three parts salad oil to one part vinegar and season with salt and pepper.
TO DRESS UP : Toss in feta, toasted nuts, dried or fresh fruit, seeds, and granola.
